During the development of Sonic X-treme, numerous level ideas were debated upon, and by the time of cancellation some had come along more than others. Jade Gully and Red Sands, for example, were given extensive production time, while others like Metal Blade and Candy Mountain are only mentioned in production documents, with nothing yet released showing if these zones went beyond the conceptual phase.
Most of the concept art and screenshots that follow below were taken from the Sonic Xtreme Compendium.

Jade Gully
Jade Gully was intended to be the tropical island level of the game. Meant to be the first level players would encounter, the art and level design was to hearken back to the classic games in the series, to ease those into the three-dimensional world of Sonic the Hedgehog. There were intended to be at least three acts, whose names would have been "Emerald Clouds," "Wolf Den" and "Bamboo Transit."

Crystal Frost
Crystal Frost was the game's winter themed level, full of ice and snow upon a treacherous mountain. There were intended to be at least three acts, whose names would have been "Prism Chorus," "Cryogenesis" and "Icegates." Early concept art also shows it was meant to be part of the ruins of an ancient society.

Red Sands
Red Sands was designed to look like it was an underground cave, with plenty of dark passages that Sonic was meant to explore, lit only by spare torches found within. There were intended to be at least three acts, which would have been called "Giza Speedway," "Pyro Pools" and "Tombs 'n Traps."

Galaxy Fortress/Death Egg
Galaxy Fortress and Death Egg are both parts of the (appropriately named) Death Egg theme, taking place in outer space on the edge of Dr. Eggman's latest and greatest creation. There were intended to be at least three acts, which would have been named "Factory Robo," "Proving Grounds" and "Megabase Control."

More a test level than anything else, being named meant the level was intended to be developed further, possibly into an underwater level. However, such progress never occurred due to the cancellation of Sonic X-treme, making it one of the lesser-along "developed" stages.

Test Levels
Through the course of creating and showcasing Ofer Alon's engine for Sonic X-treme, numerous test levels were built by both Ofer and Chris Senn. Some of these were meant to be expanded into full levels, while others were simply examples of what could be done with the engine.

Miscellaneous Levels
Christmas Level
Very much like the calender-based levels of Christmas NiGHTS, Sonic X-treme at one point considered having a "bonus" level that would be themed around Christmas. However, not much work was done to the level as the rest of the game took precedence, and in the wake of cancellation the level was quietly forgotten about.
Metal Blade
Though not featured in any proper screenshot, there are many references to a zone called Metal Blade in Chris Senn's documentation, so much that it was given a section on his Sonic Xtreme Compendium even though all that was publicly available was conceptual music. However, after the 2009 leaking of the level data to the version of X-treme Senn worked on, it was revealed that at least three acts to the zone were planned, and were named in a similar fashion to Jade Gully, Red Sands, Crystal Frost, and the Death Egg levels. They were "Nightmare Bridge," "Sewer Shock" and "Necropolis."
