Crabmeat[1], called Ganigani (ガニガニ) or Crab-crab in the Japanese manual[2], is a Badnik crab that walks slowly sideways and is always vulnerable to attack, but has little bombs it shoots out of its claws when it pauses. This Badnik is found in multiple zones in both the Sega Mega Drive and Sega Game Gear versions of the original Sonic the Hedgehog.
A Crabmeat also makes a short appearance in the Sonic the Hedgehog anime movie. The Crabmeat appears from the brushes and Sonic directs him to pinch Old Man Owl to snap him out of crying.
A real crab heavily resembling Crabmeat appears in Sonic X episode, On Sight! The Sunken Ship in Southern Sea.
There are various other crab-based badniks from the 2D Sonic games which are very similar to the Crabmeat model:

Other appearances
Sonic & Sega All-Stars Racing
It makes an appearance in the spinoff game Sonic & Sega All-Stars Racing as an obstacle for the courses of Seaside Hill. A remote controlled version of this particular Crabmeat can be purchased as an "Avatar Prop" for your Avatar exclusively on Xbox 360 marketplace.

Sonic Colours
Returning for the first time in a 3D mainline game, the Crabmeats received a modern redesign and a new pattern of attacks. Instead of bombs like previous versions, Crabmeats shoot homing missiles from their claws to hurt Sonic. Crabmeats are featured first in Aquarium Park and later in other stages.
Sonic Generations
Crabmeats are feature in both the Console / PC and the 3DS version of Sonic Generations, retaining their redesign from Sonic Colours as well as their attack pattern. They appear in both Acts of Green Hill much like their original counterparts and occasionally in Act 1 of Planet Wisp.
If Sonic manages to get hit successfully by a Crabmeat, the robot will fall to the ground and laugh hysterically in accomplishment, showing a minor level of sentience.
Sonic Lost World
Crabmeats return with a new redesign and can be found in Tropical Coast. Unlike their previous appearances they must be kicked to flip over and make them vulnerable to attack. Trying to attack them without kicking them first will cause them to counter Sonic's attack with a punch. Some Crabmeats will fire missiles like their Colours and Generations counterparts.
Sonic Mania
Crabmeats are found in both acts of Green Hill Zone, behaving exactly like their original counterparts. Their projectiles however, can be deflected if the chosen character has an elemental shield, or additionally in Mighty's case, his own shelled Spin Attack
Sonic Frontiers
In Sonic Frontiers, digital recreations of Crabmeats appear in stages thematically set in Green Hill, behaving much like their Generations counterparts.
